I need to attach more than one file to an assignment or forum, but WebStudy only permits me to attach one. How do I get around this limitation?

The key is to create a ZIP archive that contains all of the files you need to send to your instructor, then submit that archive with your assignment. You can view a short video to show you how to create a ZIP file and attach it to an assignment.
